herb Pita Chips and Hummus Dip

Hummus Dip Ingredients
4 oz garlic hummus
4 oz roasted red pepper hummus
4 oz harissa
2 tbsp pickle de gallo (I used Grillo’s Pickles brand.)
8 kalamata olives, sliced lengthwise
8 green olives, sliced lengthwise

Hummus Dip Directions
1. Spread the garlic hummus into half of a wide bowl and then spread the roasted red pepper hummus on other half.
2. Add half of harissa where the two kinds of hummus meet. Repeat with remaining harissa on opposite side.
3. Add the pickle de gallo to center of the bowl.
4. Place kalamata olives around the edge of the bowl on top of the roasted red pepper hummus. Repeat with green olives on top of the garlic hummus.

Pita Chip Ingredients
4 round pitas
¼ cup olive oil
1 tsp salt
1 tsp pepper
½ tsp garlic powder
½ harissa seasoning
¼ tsp red pepper flakes

Pita Chip Directions
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Slice each pita in half and continue cutting in half until there are 8 triangles. 
3. Mix the olive oil and spices in a large bowl.
4. Gently toss sliced pita in oil.
5. Lay pita in flat on the prepared baking sheet.
6. Bake pita for 7 minutes and then flip.
7. Bake an additional 5 minutes or until crispy.
